Mikhail’s Plate: Loaded Baked Potatoes

Baked potatoes are not only great as a side dish, but they can become the main dish in many cases. Take the time to create a great potato bar with several fixens’ and you’re your family get involved and create their very own signature potato. Baked potatoes are a treat for kids of any age!
Loaded Baked Potatoes
Yield: 4 servings
Ingredients:
4 medium russet potatoes
4 – 6 pieces of crisp bacon
1/2 cup chives, finely chopped
3 scallions, sliced
1 cup shredded reduced-fat Cheddar cheese
1/2 cup reduced-fat sour cream
Salt, to taste
Freshly ground pepper, to taste
Butter, to taste
Directions:
- Lightly rub potatoes with olive oil and pierce about four times with a fork.
- Wrap potatoes in foil and place in the oven for approximately 30 minutes or until potatoes are soft.
- Cook bacon in skillet over medium-high heat until done. Drain and pat dry.
- Once potatoes are done, cut them down the center and take a fork and lightly loosen the potato.
- Add butter and sprinkle with a little salt and pepper to taste.
- Take cheese, bacon and scallions and sprinkle on top of potato.
- Enjoy!
Note(s):
- Add a dollop of sour cream to make it more fun!
- You can also use any other meats and vegetables.
- Other baked potato bar suggested toppings: mushrooms, broccoli, cauliflower, leeks, spinach, kale, tomatoes, carrots, zucchini, artichokes, sprouts, onions, chicken, ground beef, etc.
